Homemade Sweet and Savory Bun

What happen with our magnificient world that we're living in at the moment?  This terrible pandemic thingy has been messing up our routines.  We come to the point where "Doing nothing means saving the world".  Wow!!!  It is actually perfect for a lazy person like me.  Staying at home now seems the best option to avoid and also reduce the number of infections,  But on the other hand, I have to sacrify my love of travelling and dining in.  What a shame!!!

One week at home is great... Two weeks hmmmmm it's still good... Three weeks arrghhhh ... I think my tantrums start to emerge.  That's why I have to look for some indoor activities to do.  Something that I love doing like cooking for example.  So, here me trying to be creative and playful with food that I've never done before. 

Hopefully, my recipe post can give you guys some hints to initiate to cook and produce delicious homemade food that easy yet appetising.  Good luck in trying guys. 

Hand kneading
This new formula bun that I found, requires less muscle in kneading the dough.  Very smart and the easiest I have discovered so far.  You only need to mix all bun's ingrediaents together and knead a little until the dough appear smooth.  The first fermentation step is skipped.  You can give it a bit of slamming and punching as well but not too much.  As we need to work quickly to beat the fermentation process.  Otherwise, the bun will go beery and we will end up with sour buns.



Once you finish with kneading the dough, resting it for as short as five to ten minutes.  Then you can start doing the filling and shaping.



Nothing so fancy here.  No equipement is needed in filling and rounding the bun.  I purely used my bare hands.  It may not be as good-looking as store-brought but who cares, only me know anyway.

You can choose any fillings you prefer.  My one would be these black sesame and minced pork with salted egg yolk.  The black sesame paste, I bought the ready one.  So much easy.  I just pre-rounded like a ball and meanwhile keep them in the fridge so it holds its shape and easy to handle.  For the minced pork filling, I did cook the pork in advance.  It was basically stir-fry minced pork with garlic, onion, soy sauce and sweet soy sauce.  Don't forget the salted egg yolk in the middle.  Trust me!!!  It tastes superb.

Proof them until they reach double in size
Lay them on the individual baking paper and wait for them to rise reaching their double size.  Then put them in the pre-heated steamer for around fifteen minutes.



Steam for 15 minutes
Once they cooked, bring them out to cool before enjoying them. But honestly, who can wait though. I didn't even bother with my burning fingers, these soft buns ready to be tasted straigh away and it definitely taste extraordinary.  I am proud with my creation today.  Let's nibble... Nom.. Nom... Nom...

By the way, something unpredictable happened.  My stove ran out of gas in the middle of steaming.  And I tried to bake the rest of buns.  Surprisingly, it tasted like baked-bun (sounds silly when I said this).  The bun is slightly crispy on the outside yet soft inside.  I might try this cooking method next time.  A lot easier and less time consuming.  Or I may try those famous baked-bolo bun that we normally get from dim sum restaurant.

Ok!!  So... Nonetheless, when I was browsing internet couple days ago, I saw many people actually posted some photo showing the beauty of our world a few weeks after the lockdown.  At least this terrible virus brings something wonderful for our Earth. The over-used Earth turns back into Its serene and charm.

Hopefully, this nightmare will be gone in jiffy.  Let's keep thinking positive and help the world liveable again sooner.  Eventhough, I couldn't help the people much but my pray goes to all who got infected and affected physically and mentally respectively.  Stay strong and healthy guys.  Octie Appetie....

Bun recipe
Makes: 25-28 buns


All purpose flour
750 gr
Yeast
1 sachet/11 gr
Caster sugar
50 gr
Margarine
50 gr
Salt
1 tsp
Warm water
400 ml
Method
1. Mix all ingredients together in a bowl.
    Stir until combined.
2. Start kneading and punching for about 10 minutes
    or until smooth.       Give them a little rest.
3. Cut the dough and fill and shape each part into
    a ball. Making sure the ball has no hole.
    Otherwise the filling may leak out,
4. Place each ball on a square baking paper. Let it stand
    until double in size
5. In the meantime, bring water to boil in a steamer.
    Reduce the heat to medium.
6. Transfer buns on baking paper as many as comfortably
    fit onto the steamer leaving about 2-3 cm apart.
7. Cover with the lid and steam for 15 minutes.
8. Continue steaming buns in batches until all are cooked.
* Becareful when remove the lid or else water drip onto bun’s
   surface and will make yellowish spot on bun surface.
   You can otherwise wrap up the lid with kitchen towel.

Today we were going to visit another theme park in Singapore.  After fueled up our body with healthy yet delicious breakfast from Inter Continental Hotel, we geared out to River Safari for a day of adventure with water animals and many more.

Not much pictures taken today, too much enjoying cutie animals.  This place could bring so much fun if you love animals and definitely be one of the place to visit with kids.

Singapore Part 3: Universal Studios Singapore

This was the great breakfast from InterContinental I mentioned earlier.  It is a buffet breakfast with some ala carte breakie menus available to order as well.  They serve healthy and delicious options to boost up our morning.  The choices such as avocado on toast, pancakes with fresh berries, granolas and more.  Their buffet ranges are impressive and their bread selections, especially those chocolate croissants are absolutely mouth watering.  Their coffee is freshly brewed too, so unlike any other hotel breakfast where they use the instant coffee machine.

Pancake and berries
Although the pancake itself was pretty mediocre but as it accompanied with fresh chopped berries, some crumbles and maple syrup, this dish turned out to be rather good.

Today our plan was to spend the whole full day in Universal Studios.  With an express pass in our hand, we believed we could cover most of the rides and attractions.  The pass was actually cheaper than the fast pass or express pass. But I can tell you guys, it is definitely worth it.  However, the express pass price could be differ base on how much the demand on that specific day, but apparently I have seen in some website that you can actually purchase this pass in advance and lock the price as well.

You can enjoy one-time or unlimited fast track to most of the attractions.  While only about three or four rides and attractions that are unavailable with this pass. So, basically we saved hours and hours of waiting time on that day.  We were feeling absolutely blissful yet pity of those who were standing on the regular line.  Sorry guys, I totally understand how you feel because I've been there, done that.

There were only around less than ten people ahead us and not more than ten minutes waiting for Puss in Boots Giant Journey.  Compared to the regular line that sometimes could take less or more than one hour waiting.  Skipping the sline is so satisfying.








We could do so much in a day.  But travelling with kid is quite tiring too.  Therefore, we left just before dinner time.  And spent the rest of our evening in our comfy hotel while enjoying some late night snacks and sweets.

Singapore Part 2: Mao Shan Wang and Maxwell Hawker Centre

Fancy durian dessert was a hit in Singapore back then couple years ago.  We were kinda pretty late in trying these dessert menus.  It was 2018 when we were there.  This Mao Shan Wang cafe was pretty much the early bird shop that serves durian-theme desserts in Singapore.  Durians from this cafe are claimed to be fresh and daily delivered straight from Penang, Malaysia.

For durian lovers, the menu need to try is durian charcoal pizza.  It is a charcoal based pizza scattered with fresh durian and topped with heaps of melted cheese.  I was very excited when they served this hot durian pizza on our table.  The first bite was little weird but delightful.  I totally enjoyed.  And I had my second piece right after.  However, after that second piece, I felt "OOH", a little bit too much.  Make sure you share this one tray of large size pizza with few friends or family.  In this case, "less is surely more".

We also tried their signature ice cream delight, durian ice cream with lots subtle durian flavour than our pizza earlier.  It is much refreshing than the pizza and my son loves the smoky effects when the waitress brought this ice cream to our table.


Mao Shan Wang is conveniently located in Chinatown, so right after we enjoyed our sweets, we had some walks around there, emptying our tummy before some Singaporian dishes dinner.  Singapore is multicultural, the three main ethnics are Chinese, Malay and Indians.  And they all live in harmony.  You can find Hindu temple in the Chicnatown area.  While we were in Chinatown, we visited the two famous Hindu and Chinese temples.

Right opposite this Buddha Tooth Relic Temple, there is this food court called Maxwell Hawker Centre that we can visit again and again. This food court centre is popular for both tourists and Singaporians. This is because the food here are affordable, tasty and most of the stalls open for long hours from early breakfast until supper.


Most tourists come here to try that chicken rice from Tian Tian shop.  We had tried this shop from our previous trip (Tian Tian Hainanese chicken rice), so now we wanted to try some other chicken rice shop.  Randomly we picked this stall but we couldn't remember the name.  Accompanied with stir fry choy sum.  It was actually not taste far different from that Tian Tian shop.  I was equally good.  They also gave a big portion too.



The next dish we got was another randomly picked, char kwe tiay from the shop on the same alley with chicken rice.  The old guy prepared this dish expertly.  The dish got nice charred and dark brown color, very saucy.  Delicious dish.  But tt would be even better if it was slightly more salty.

Singapore Part 1: InterContinental Singapore Robertson Quay

We as a parent, the thing to consider when travelling with kids, first of all, we need to pick the suitable destination that of course "Family Friendly".  Singapore is definitely made at the top of our list.  This tiny country in Southeast Asia, provides us with great range of kids activities, convenience and complex transportations for getting around the town and plenty nice and comfortable accomodations available to choose fitting the family budget.  Not forget to mention about their multicultural cuisine that taste wonderful without break your wallet and nice tropical weather nearly all year around.  So, it is a Win Win situation for everyone, I believe. 


For the first two nights, we stayed at InterContinental Hotel in Robertson Quay.  It is a contemporary designed boutique hotel located near busy Clarke Quay.  The thing impressed me the most is their breakfast food.  I will talk about this in my later post.
